Katsuo no tataki


Katsuo no tataki


This is lightly roasted bonito. Not sashimi.

Japanese like to eat bonito as tataki, but I don't know why and disagree.

Bonito sashimi is my favorite sashimi. I also like tataki, but if so, It is not my favorite.

Today my mom brought back this from her place, said given by her coworker had a trip to Kouchi prefecture.

Her coworker recommend to eat it with salt, and I tried for the first time, but It is not delicious at all!

I think tataki should be served with ponzu, bonito sashimi should served with sliced garlic. Not wasabi for it, garlic is better :D

Oily and tasty taste andbeatiful texture it has.

I love all sashimi, especially oily fishes.

Yellowtail, tuna(not back side), salmon, yellowfin are my favorite. But cheapest is Salmon. Otherwise so expensive :(

we can find "save 50%" salmon sashimi after 6PM at market, so I usually perchase it :p

Salmon sushi is also great.

Today I introduce Japanese important language.

It is "Hangaku". Have you ever heard it?

It means 50% off. You can see a yellow seal on wrap, there are kanji character of "Hangaku" displayed.

This salmon sashimi cost $3 usually, but if I can find yellow seal, the amount is $1.5 :p

After 5PM, You can see a lot of the seal in fresh fish area at supermarket.

There are various seal for promoting, 200yen Off, 300yen OFf, 30% Off etc..

Saba Makizushi

I think sushi is popular among foreigner, but I don't think this one is popular.

As there are a lot kind of sushi here in Japan, what is most popular?

Tuna? or Salmon?

Those sushi served in Japanese restaurant in overseas, and expensive.

In Japan we eat other fish when we don't have enough money to go to Sushi restaurant.

Aji and Saba are one of most fish as ingredients of reasonable sushi.

In English, they are Japanese horse mackerel andchub mackerel according to my dictionary.

The photo I attached is Saba Makizushi.

It is reasonable and delicious :p

Nattou Maki


Nattou Maki


This is nattou sushi roll.

If you don't know about "nattou" please check this post.

"Maki" means "roll" in English. So Nattou Maki means sushi roll with Nattou.

Ordinary sushi is "Nigiri-sushi". "Nigiri" means "grip".

There are a lot of fresh fish and other things to be cooked into sushi in japan.

But you know, some of Japanese children don't like raw fish like that foreigner do.

I didn't like raw yellowtail when I was child because it is so oily(now, I love it).

So there are a large variety of sushi that doesn't made by fish in sushi restaurant in Japan.

Such as, Chicken teriyaki, Yakiniku, Humberg steak, Prawn tempura, omulet(all of them are put onto rice and cooked into sushi!) and other ingredients depends on a place.

So everyone can enjoy their time in sushi resturant in Japan.

Bonito sashimi

Today, I introduce my FAVORITE sashimi on this post.

It is bonito.




Bonito is easy to go bad, so it's pretty hard to eat comletely fresh bonito sashimi in the city far from sea.

I live in Matsuyama city among Setouchi-sea and pacific ocean, so we can!

Usually, Sashimi is served with grean leaves and some garnish, but bonito sashimi is served with julienne or chopped garlic in my hometown.

It is important. If without garlic, bonito sashimi is not my favorite. Yellowtail or salmon sashimi would be my favorite.

Someday, when I go to Japanese traditional restaurant("Ryotei" or "Kappou"), I will introduce lobster sashimi :D

This is "beta version" Sushi that is under contemplation in my mum's place.

She is working in market as chef so sometimes she brought some "beta version" foods :p

This one is delicious so will be launching selling at market soon. The ingredients are...

On the left : salmon caviar with green leaves.
On the top line from the left : eel with seaweed, lightly roasted salmon, Yellowtail, and mackerel
On the bottom line from the left : Boiled prawn, boiled squid, tuna

Now I want to eat Maki-sushi(Sushi-roll) :p

Sushi sold in market


I wrote about sashimi yesterday so it's time to introduce sushi that sold in market.

We often eat sushi as you think, but not in Japanese restaurant.

We can buy delicious sushi in supermarket so no need to go to restaurant.

This package is my mum's favorite so we usually eat this.

top line from the left; 2 tuna, 3 squid, and 2 salmon
middle line from the left; 2 bream, 2 sea urchin, 2 salmon caviar, 2 shrimp, 1 sacallop
bottom line from the left; 2 egg sushi, 2 prawn, and 2 eel

I think if I eat this in Japanese restaurant, I have to spend 5000yen(40USD) but this is sold as 2000yen(15USD) in market.

And what is important for sushi is soy sauce. Choose exepensive one to make sushi better!

This is how Sashimi sold in Japanese market.

Sashimi and garnishing(julienne radish, chopped onion spring, green leaves and ground chili).

Sometimes, raw fish block are sold but basically most of sashimi are sold as slices.

This package includes 10 slices of flounder and 680 yen(around 6 USD).

But remember, most of sashimi are 50% discounted after 6pm.

Flounder is not expensive fish here in Japan. Salmon, Squid, mackerel are as cheap as.

Bream, yellowtail, sea urchin are not cheap.

I think sea urchin are not so expensive in overseas. In the Philippines it was not expensive when I lived there.

Tai(sea bream) Sashimi


Is that right that I call this fish as "sea bream"?

I fish this one in Australia and an German taught me this is "sea bream" in English.

I'm not sure..

Sea bream is one of most expensive fish in Japan, and Japanese eats it on some legal holiday or someone's marrige celemony or birthday.

But we also eat it on ordinary day.

What is best sashimi for me is probably yellowtail or salmon.

I like sashimis that smell fishy and oily.

When I eat delicious sashimi, I thank God that I am born as Japanese!




When I eat spicy food in Thai, I wish I could born as Thai.:(

Am I selfish?

Today, I introduce about Katsuo no Tataki(lightly roasted bonito).

I didn't know the word "bonito". I thought "yellowfin" instead of "bonito".

Is it wrong? I saw bonito saled in the market in the Philippines as the name of "yallowfin". It was expensive in the Philippines.

I think you have ever tried Sushi or Sashimi. It is completely raw.

"Tataki" means "lightly roasted" according to the dictionary.

I live in Ehime prefecture in Japan, and Kochi prefecture that is located next to Ehime is largest production area of bonito in Japan.

Therefore, I could eat flesh bonito in my hometown at a law plice.

I saw lightly roasted bonito in Japanese restaurant in Australia, Bangkok, Philippines and was used to eat it instead of Tuna Sashimi.

I also like Sashimi of bonito, but in my hometown, Tataki is more popular way to eat bonito.

If you don't like completely raw fish, you should try this one first prior to eat Sashimi. This one doesn't smell very much of "Raw fish".

Shimesaba( vinegared mackerel)




Ordinary dinner in my home.

On the left: Spinach salad (ONLY spinach!)
Fish on the center: Shimesaba (vinegared mackerel)
Small bowl on the center: steamed vegetable(the name is "Chikuzen-ni")
On the right: deepflied filltes of white fish.

Have you ever tried vinegared mackerel in your place(see 2nd photo attached)?

I have never seen it in foreign countries.

I don't know exact way how to cook it but ,according to my mother,

1, Cut the mackerel into fillet.
2, Dredge a little bit of salt and keep it in the fridge for a couple of hours
3, Briefly wash the mackerel and dip it into vinegar completely for a half hours.


I love sour foods and spicy foods! So I like vinegared fish so much!

And it's important, "Shimesaba" is so cheap!

Do you know how expensive Sushi are!?

I think Sushi is much more expensive in foreign coutries but as far in Japan!

But Shimesaba is only 2 USD per package(includes a mackerel).

So I often eat it...

Sushi



Needless to say, This is Sushi.

I think Japanese restaurants exists all over the world (include imitation Japanese restaurant) and most of them serve Sushi these days.

So, Have you ever eaten Sushi? And do you like it?

For me, Sushi is not my favirite. I think there are a lot of great cuisine with the exception of Sushi in Japan.

I will introduce it later.

I ate Sushi at Japanese restaurant in Australia, Thai, Philippines, and Hong Kong.

But none of them serve delicious Sushi. And So expensive!

In Japan, there are belt conveir Sushi restaurant and we pay for less than 2,000 JPY per 1 person.

This Sushi plate(photo attached above) is saled 2,000 JPY in supermarket and good for 3 or 4 people.

But this is much more delicious than Sushi in Japanese restaurant in Philippines.

I'm not sure but Japanese ordinary family go out for dinner in Sushi restaurant once in a month.

But I preffer to go to other restaurant to Sushi restaurant.
